  • 1 pound shrimp, peeled and deveined
  • 8 ounces lo mein, rice, or udon noodles
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • ½ cup julienned carrots
  • 2 cloves garlic, minced
  • 2 scallions, chopped (white and green parts separated)
  • 3 tablespoons vegetable oil
For the Sauce:
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons hoisin sauce
  • 1 teaspoon sesame oil
  • ¼ cup chicken broth or water
  • 1 teaspoon cornstarch (mixed with 2 tbsp water)

 

Instructions

Prepare the ingredients: Cook the noodles according to package instructions, then drain and set aside. Whisk together all sauce ingredients.
2️⃣ Cook the shrimp: Heat 1 tablespoon oil in a wok or pan over medium-high heat. Add shrimp, cook for 2 minutes per side, then remove.
3️⃣ Stir-fry the vegetables: Add another tablespoon of oil, then cook the broccoli, carrots, and bell peppers for 3-4 minutes. Add garlic and scallion whites, then cook for 30 seconds.
4️⃣ Combine everything: Push the veggies to one side, pour in the sauce, and let it thicken for 30 seconds. Add the noodles and shrimp, tossing everything together.
5️⃣ Serve & enjoy: Garnish with scallion greens and sesame seeds, then serve hot!
