Lentil Soup – A Hearty and Nutritious Classic

This hearty and nutritious lentil soup is packed with protein, fiber, and bold flavors. Made with simple pantry ingredients, it’s an easy one-pot meal that’s both satisfying and budget-friendly.

Ingredients

  • 1 cup lentils (brown or green)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, sliced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon turmeric
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tablespoon lemon juice (optional)
  • Fresh parsley for garnish

 

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onions, garlic, carrots, and celery for about 5 minutes until softened.
  3. Add cumin, paprika, and turmeric, stirring for another minute.
  4. Stir in lentils, diced tomatoes, broth, and bay leaf. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 25-30 minutes until lentils are tender.
  6. Season with salt and pepper, then stir in lemon juice for brightness.
  7. Remove bay leaf, garnish with fresh parsley, and serve hot.

Notes

  • For a thicker soup, blend half of it using an immersion blender.
  • For extra flavor, add a pinch of red pepper flakes.
  • Store leftovers in the fridge for up to 5 days or freeze for 3 months.
