- 1 cup lentils (brown or green)
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, sliced
- 1 teaspoon cumin
- 1 teaspoon paprika
- ½ teaspoon turmeric
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 bay leaf
- Salt and pepper to taste
- 1 tablespoon lemon juice (optional)
- Fresh parsley for garnish
- Heat olive oil in a large pot over medium heat.
- Sauté onions, garlic, carrots, and celery for about 5 minutes until softened.
- Add cumin, paprika, and turmeric, stirring for another minute.
- Stir in lentils, diced tomatoes, broth, and bay leaf. Bring to a boil.
- Reduce heat to low, cover, and simmer for 25-30 minutes until lentils are tender.
- Season with salt and pepper, then stir in lemon juice for brightness.
- Remove bay leaf, garnish with fresh parsley, and serve hot.
Notes
- For a thicker soup, blend half of it using an immersion blender.
