Ingredients

  • 2 cups old-fashioned oats
  • 2 apples, chopped
  • 1 ½ cups milk (or dairy-free alternative)
  • 2 eggs (or flax eggs)
  • ¼ cup maple syrup or honey
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • ¼ cup chopped nuts (optional)

 

Instructions

  • Preheat the oven to 350°F (175°C) and grease a baking dish.
  • In a bowl, mix oats, cinnamon, nutmeg, baking powder, and chopped nuts.
  • In another bowl, whisk eggs, milk, maple syrup, and vanilla extract.
  • Combine the wet and dry ingredients, then fold in chopped apples.
  • Transfer to the baking dish and bake for 35-40 minutes until golden brown.
  • Let cool for 5-10 minutes before serving. Enjoy!
