Red Beans and Rice with Sausage

Ingredients List:
- 2 cups dried red beans, soaked overnight
- 1 pound smoked sausage, sliced
- 1 onion, chopped
- 2 celery stalks, diced
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon black pepper
- 1/2 teaspoon thyme
- 4 cups chicken broth
- 2 cups cooked white rice
- 1 bay leaf
- 1 tablespoon vegetable oil
- Heat vegetable oil in a large pot over medium heat.
- Sauté onions, celery, and bell pepper until softened (about 5 minutes).
- Add garlic, sliced sausage, and Cajun seasoning, stirring for 2 minutes.
- Pour in chicken broth, add soaked red beans, thyme, bay leaf, and black pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 hours until beans are tender.
- Mash some of the beans to thicken the sauce, then remove the bay leaf.
- Serve hot over cooked white rice and garnish with fresh parsley.
