Red Beans and Rice with Sausage

Ingredients List:

  • 2 cups dried red beans, soaked overnight
  • 1 pound smoked sausage, sliced
  • 1 onion, chopped
  • 2 celery stalks, diced
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 4 cups chicken broth
  • 2 cups cooked white rice
  • 1 bay leaf
  • 1 tablespoon vegetable oil

 

Instructions

  • Heat vegetable oil in a large pot over medium heat.
  • Sauté onions, celery, and bell pepper until softened (about 5 minutes).
  • Add garlic, sliced sausage, and Cajun seasoning, stirring for 2 minutes.
  • Pour in chicken broth, add soaked red beans, thyme, bay leaf, and black pepper.
  • Bring to a boil, then reduce heat and simmer for 1.5 hours until beans are tender.
  • Mash some of the beans to thicken the sauce, then remove the bay leaf.
  • Serve hot over cooked white rice and garnish with fresh parsley.
