Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • Juice of 1 lime
  • 1 cup cooked white or brown rice
  • 1 cup grilled corn kernels
  • ¼ cup mayonnaise or Greek yogurt
  • ¼ cup crumbled Cotija cheese
  • 1 teaspoon Tajín seasoning
  • 2 tablespoons chopped cilantro
  • 1 small avocado, sliced
  • 1 tablespoon chipotle crema (optional)

Instructions

  • Marinate the Chicken: In a bowl, mix olive oil, lime juice, chili powder, smoked paprika, garlic powder, and cumin. Coat the chicken and let it marinate for at least 30 minutes.
  • Grill or Pan-Sear the Chicken: Heat a grill or skillet over medium-high heat. Cook the chicken for 6-7 minutes per side until the internal temperature reaches 165°F (75°C). Let it rest before slicing.
  • Prepare the Mexican Street Corn: In a bowl, mix grilled corn, mayo or Greek yogurt, Cotija cheese, Tajín, and chopped cilantro. Stir until well combined.
  • Assemble the Bowl: Start with a base of cooked rice, add sliced grilled chicken, and top with the street corn mixture. Garnish with avocado slices and drizzle with chipotle crema if desired.
  • Serve and Enjoy: Mix everything together for the perfect bite!

Notes

Notes for Street Corn Chicken Rice Bowl

  • Marinating Time Matters: For the juiciest chicken, marinate for at least 30 minutes, but overnight is best for maximum flavor.
  • Grilling vs. Pan-Searing: A grill gives the best smoky char, but a cast-iron skillet works well too.
  • Corn Options: Fresh is best, but frozen or canned can be used—just make sure to dry and char them properly.
  • Rice Choice: Cilantro-lime rice adds extra freshness, but brown rice or quinoa works for a healthier option.
  • Creamy vs. Light: Use mayo for a rich taste or swap it with Greek yogurt for a protein-packed alternative.
  • Customizable Heat: Adjust spice levels with extra Tajín, chipotle crema, or diced jalapeños.
  • Meal Prep Friendly: Store components separately for up to 4 days and assemble when ready to eat.

This dish is versatile, easy to make, and packed with bold flavors—perfect for any meal! 🌮🔥
