The Best Chicken Soup Recipe

Ingredients

  • 1 whole chicken (or 4 bone-in chicken thighs)
  • 8 cups water or chicken broth
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 bay leaf
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon turmeric (optional for extra warmth)
  • 1 cup egg noodles (optional)
  • 1 tablespoon fresh parsley, chopped

 

Instructions

  • In a large pot, add chicken, water (or broth), onions, garlic, carrots, celery, bay leaf, salt, and pepper.
  • Bring to a gentle boil, then reduce heat and let it simmer for 1.5–2 hours.
  • Remove the chicken from the pot and shred the meat. Discard the bones.
  • Return the shredded chicken to the pot and add noodles (if using). Cook for another 10 minutes.
  • Stir in fresh parsley and adjust seasoning if needed.
  • Serve hot with crusty bread or a side salad.
