A hearty and nourishing vegan soup made with lentils, turmeric, and lemon. It is packed with protein, fiber, and anti-inflammatory properties, making it a perfect choice for a healthy meal.

  • 1 cup red or yellow lentils, rinsed
  • 1 tablespoon olive oil or coconut oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 medium carrot, diced
  • 1 teaspoon turmeric powder
  • ½ teaspoon cumin powder
  • ½ teaspoon coriander powder
  • ½ teaspoon black pepper
  • 4 cups vegetable broth or water
  • Juice of 1 lemon
  • ½ teaspoon salt (adjust to taste)
  • Fresh cilantro or parsley for garnish

 

Instructions

  • Heat the oil in a large pot over medium heat.
  • Add the chopped onion, garlic, and ginger, sautéing for 2 minutes until fragrant.
  • Stir in the turmeric, cumin, coriander, and black pepper, cooking for another minute.
  • Add the carrots and lentils, stirring to coat them with the spices.
  • Pour in the vegetable broth, bring to a boil, then reduce to a simmer. Cover and cook for 20 minutes.
  • Stir in the lemon juice, adjust the seasoning, and remove from heat.
  • Garnish with fresh cilantro or parsley and serve warm.

 

Notes

  • To make it creamier, blend half of the soup or add coconut milk.
  • For a spicier version, add red pepper flakes or cayenne.
  • Serve with crusty bread, rice, or a side salad for a complete meal.
  • Freezes well for up to 3 months.
