- 1 tablespoon olive oil or coconut oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 medium carrot, diced
- 1 teaspoon turmeric powder
- ½ teaspoon cumin powder
- ½ teaspoon coriander powder
- ½ teaspoon black pepper
- 4 cups vegetable broth or water
- Juice of 1 lemon
- ½ teaspoon salt (adjust to taste)
- Fresh cilantro or parsley for garnish
- Heat the oil in a large pot over medium heat.
- Add the chopped onion, garlic, and ginger, sautéing for 2 minutes until fragrant.
- Stir in the turmeric, cumin, coriander, and black pepper, cooking for another minute.
- Add the carrots and lentils, stirring to coat them with the spices.
- Pour in the vegetable broth, bring to a boil, then reduce to a simmer. Cover and cook for 20 minutes.
- Stir in the lemon juice, adjust the seasoning, and remove from heat.
- Garnish with fresh cilantro or parsley and serve warm.

- To make it creamier, blend half of the soup or add coconut milk.
